Jamaican Gin Fizz

1.5 oz Gin
1 oz Ginger Syrup
.5 oz Lemon Juice
.5 oz Pineapple Juice
.5 oz Heavy Cream
Bar-spoon Orange Flower Water
1 Egg White
Seltzer
Combine all ingredients but seltzer into a Boston Shaker, add ice and shake vigorously for one minute. Strain ingredients into the empty portion of the shaker & discard ice.
Return to shaker & continue to shake for another minute. Pour unstrained into a Collins glass & slowly add seltzer until a head of foam forms at the lip.
Add 5 drops of Craftsman Sazerac Bitters & garnish with a pineapple slice, cheers!
